Hey friends! Sharing these fun Veggie Wraps with Roasted Red Pepper Sauce!🌿🍃

Wanted a quick and veggie packed meal to take me through the afternoon today. Plus, this is a clean out the fridge dish that was super tasty! 👍 You can use whatever seasonings you like for the veggies. This seasoning blend ended up tasting awesome 💃🌿🍃

Roasted Veggies
2 tsp oil
1/4 tsp salt
1 tsp curry powder
1/2 tsp garlic powder
1 tsp italian seasoning
1 can chickpeas drained and rinsed
3 cups cauliflower florets cut bite sized
1 cup sliced bell peppers
1/3 cup sliced onion

Roasted Pepper Sauce
2 tsp lemon juice
1 tsp vinegar
1/4 to 1/2 tsp sriracha
1 tsp basil
1 cup roasted peppers drained and dried with a towel
2/3 cup vegan sour cream
3 large garlic cloves
1 tsp agave or maple syrup

Garnish: greens and sliced cucumber
On @mikeys grain-free tortillas

Makes about 4 wraps

In a baking dish, combine all ingredients in the roasted veggies section above. Roast at 400 degrees for about 25 minutes until cauliflower is tender and lightly browned, toassing halfway through.

While veggies are cooking, combine sauce ingredients and blend until smooth.
