Healthy pot dumplings with apricot compote ? (recipe)
It was time again for delicious curd cheese dumplings, this time I filled them with apricot compote. You can of course also fill them with chocolate or other fruits.
This time quite simply with butter breadcrumbs and powdered sugar!

Recipe:
For the dumplings:
180 g quark
1 egg
80 g melting flakes
1-2 tbsp erythritol
Abrasion of a tonka bean @hartkorn_gewuerze
Compote:
130 g apricots
10 g of sugar
1 tbsp water
Wash the apricots, cut in half, remove the core and cut into cubes. Heat the sugar in a saucepan until it melts and caramelizes. Add the apricots and water and simmer covered until the apricots disintegrate.
Dumplings:
Mix the egg and the low fat curd until smooth. Then add the melting flakes, a grist of a tonka bean and erythritol and mix the dough.
Bring water to a boil in the pot and use your wet hands to twist balls out of the batter. Fill the compote into the middle with a spout and shape it again round.
Turn the water back and put the balls in the boiling water for 8 minutes (when they swim above they are done). I rolled them in butter crumbs. For this you need 4 tablespoons breadcrumbs and 1 tablespoon butter. Fry them golden brown and roll the dumplings in them. Finally sprinkle a little icing sugar over it.
