Happy Black Friday my friends! Is everyone still dreaming of Thanksgiving dinner?! Or eating leftovers? I’m using up some leftover roasted butternut squash with delicious gluten-free pasta by @ancientharvest with asparagus and marinated artichokes in a sun-dried tomato pesto, to (of course) console myself that Thanksgiving is now over ?? Topped with red chili flakes and nutritional yeast?? .

For the pesto, blend 1/3 cup sundried tomatoes (the kind marinated in oil), 1 T lemon juice, 1 T red wine vinegar, 1 cup fresh basil leaves, 1/4 cup olive oil, 1 garlic clove minced, 2 T chopped kalamata olives, 1 teaspoon kosher salt and 1/2 teaspoon pepper. Blend and sprinkle in a tablespoon or two of water if needed during blending. Taste for seasoning and add salt if desired. ?
