Giving #tofutuesday another go-round with this delicious stir fry with udon noodles, loads of veggies and peanut sauce. Sauce isn’t pictured, but got drizzled on this plate of sauteed and seasoned green beans, carrots, and broccoli then topped with chopped peanuts and green onion. Would be perfect additionally topped with sesame seeds and cilantro #toppingsregret ?? Seasoning for the veggies is as simple as salt/pepper and garlic powder or fresh if you have it! Then add the peanut sauce. ??

Sauce: whisk the following extremely well – 1/3 cup natural peanut butter, 4 to 5 T warm water, 2 t oil, 1 T rice wine vinegar, 5 t low sodium tamari or soy sauce (soy sauce has stronger flavor in my opinion and works a bit better..can use a mix of both!), 1 t sriracha or more (I used 3), 1.5 t onion powder, 1 t garlic powder, 2 t maple syrup, 1/2 t ginger powder. Add touch more water if desired! ??
