Endive & Apple Salad with Roasted Chickpeas and Raddichio ?✨?✨

Ever since I tried the endive and raddichio combo at a friend’s house, who is also queen of homemade dressings @bbzangel70j ), I have been loving the combo as a crisp and flavorful base for salads that have fruit and/or a sweeter dressing to balance out the bite of the leaves. Here I used crunchy apples and chili roasted chickpeas with maple tahini dressing and it was GLORIOUS!? .
DRESSING: 1/3 cup tahini, 2 teaspoons maple syrup, 1 T red wine vunegar, juice of 1/2 lemon, and enough water to thin. Dash of salt and pepper ?✨

CHICKPEAS: drain and rinse 1 can chickpeas. Pat dry and arrange on baking tray. Drizzle with 1-2 teaspoons oil and gently toss. Sprinkle with kosher salt, pepper, and bit of chili powder. Bake in preheated 400 degree fahrenheit oven for 15 minutes ?✨
