?Easy garbanzo curry + rice bowl. ?It may be summer but I still must have a good ol’ curry once in a while to keep me going??. What do you think Joanne (fellow curry lover) @the_balanced_kitchen ?? It’s a VERY rare thing for us to eat white rice in this house ?but we just had to do it! My usual go to with this meal would be farro or quinoa. .?Recipe: Sauté 1/2 large yellow onion (finely diced) + 2 small potatoes (cut into 1/2-inch cubes) in 2 tbsp olive oil about 5 minutes. Add 3 finely minced garlic cloves and sauté another minute. Add 1 (rinsed + drained) 15-ounce can of garbanzos + 1.5 tbsp tomato paste + 1 tbsp sriracha. Sauté another minute. Add 1 tbsp curry powder, 2 tsp onion powder, 1/2 tsp turmeric, 1/4 tsp paprika, a few turns black pepper, salt to taste. Sauté another minute before adding 1 cup coconut milk (lite or full-fat) + 1/2c vegetable broth. Simmer until potatoes fork tender. Top with chopped cilantro. .
