Brown Rice Lo Mein with Peas & Mushrooms ??
.
Happy Friday everyone! Sharing a healthier version of one of my favorite takeout dishes today ??? These noodles are packed with vegetables and have a little kick to them ? If you are sensitive to spice, dial down the pepper and chili garlic sauce ???
.
3/4 package brown rice lo mein noodles (or your favorite noodles)
2 tsp sesame oil
1 small onion finely chopped
8 oz. mushrooms roughly chopped
Dash salt and pepper
1 T tamari
1 tsp garlic powder
Sauce: whisk together
2 tsp chili garlic sauce
5 T tamari or soy sauce
1 T sesame oil
2 T rice vinegar
1.5 T agave or maple syrup
1 tsp cornstarch + 2 tsp water whisked
1.5 cups frozen peas
1.5 cups bean sprouts
1 T sesame seeds for garnish
Chili flakes for garnish
Cook noodles according to package directions, drain, rinse, set aside. In large skillet, add oil, onion, mushroom, salt/pepper. Cook about 8 to 10 minutes on medium heat, stirring often until tender and browned. Add tamari and garlic powder, cook another minute. Add frozen peas, bean sprouts, sauce, cook one minute. Add noodles, stir and cook 3 minutes until sprouts wilt slightly. Add garnish if desired. ????
