?BBQ Cauliflower Steaks, Garlicky Bok Choy, Kelp Noodle Bowl?
Iyengar yoga class and lunch with a bff today. Then a bike ride with the family minus the 2 who are still at sleep away camp in the wilderness. Wondering how they are coping. No phone calls allowed. Just good old-fashioned snail mail….
Crunchy kelp noodles you see here are a good source of calcium + tons of vitamins and minerals (including iron), at only 12 calories a serving.
?Recipe
Remove leaves from cauliflower. Place stem side down and cut 1/2 inch steaks from middle outward. You may get 2 or 3 good looking ones. Marinate I’m BBQ sauce at least 45 minutes. Sauté on cast iron skillet a few minutes a side. Roast at 400F on baking sheet for about 10 minutes until cooked.
?Sauté sliced garlic cloves in oil until fragrant. Add bok choy and sauté a few more minutes. Add a little water and cover with lid for a couple more minutes. ?Serve with lightly sautéed garlicky kelp noodles and a protein.
