A delicious and easy Green Pea & Chickpea Curry! #meatlessmonday ?? .
Hope you had a great Easter, for those celebrating! This mild curry was so flavorful and a hit with the family, that I am so excited to share it! For those that crave more spicy, just add some red chili flakes, cayenne or sriracha. .
GreenPea and Chickpea Curry

INGREDIENTS:
1 onion finely chopped
1 t oil
1 T cumin
2 T curry powder
1 T garlic powder
2 t oregano
2 cups peas
1 15 oz. can chickpeas
1 15 oz. can crushed tomato
1 15 oz. can coconut milk
1 t kosher salt
1/2 t pepper

DIRECTIONS:
Saute onions in oil for about 10 minutes, stirring often and adding bit of water if too dry. Add cumin, curry and garlic powders, stir for 1 min. Add all other ingredients, stir, gently simmer for 10 min. Taste for seasoning and add more salt if desired.
