Curry fried rice – save this simple & quick recipe for dinner today.?
What is your favorite veggie to include in your fried rice? For me, any leftover veggies will do☺️. I used red curry powder here but any curry powder would work. Enjoy this easy recipe & have a lovely Wednesday, friends!?
Recipe (yields 3-4 servings)
Ingredients:
~ 3 cups cooked Jasmine rice
~ 1 cup chopped asparagus
~ 1/2 cup chopped fried/pan-fried tofu
~ 1/4 cup chopped carrots
~ 2 finely sliced shallots
~ 2 tablespoons *soy sauce
~ 1-2 teaspoons curry powder
~ 1-2 teaspoons sambal/chili paste (optional)
~ oil & salt to taste
✅In a heated non-stick pan with 3 teaspoons oil, sauté shallots until they turn translucent.
✅Then, add tofu, carrots, asparagus, curry powder, sambal (if using) & cook for 1-2 minutes.
✅Add in rice & give it a quick toss, then season with soy sauce & salt. ✅Cook for a few minutes by stirring continuously so each grain is coated with curry powder. ?Serve warm with a squeeze of lime juice & garnish with chopped scallions.
*Replace soy sauce with coconut amino or tamari for a gluten-free version.
