How do you start your week? I love starting my weeks (and pretty much all my days) with a good breakfast because it keeps me going throughout the rest of the day. I personally can’t function without any food ? and I love squeezing in an hour or so preparing a bulk meal for the next few days!

One of my go-to bulk meals is definitely stir-fried noodles—or basically anything stir-fried since it’s super easy! This time around, I worked around a lot of the products I received from @7grainspantry to make a really good sauce for my noodles since their products are much healthier than their regular counterparts which was super exciting. And I also used their protein pasta (more like noodles for me actually!) to create a noodle stir-fry that’s not only super good but super nutritious (and packed with protein too ??) __

Stir-fried sweet tamarind noodles
100 g dry noodles of choice (I used @7grainspantry’s edamame + soybean pasta)
Veggies of choice
Tofu (optional)

Sauce:
1/8 cup tamarind paste/purée (I used @7grainspantry’s tamarind purée ??)
1/8 cup liquid aminos/soy sauce (I used @7grainpantry’s skinny seasoning)
2 tbsp coconut sugar
1 tbsp water
1 tbsp sesame oil + additional 1 tbsp for cooking
1 tbsp salt, or to taste

1. In a bowl, mix all he ingredients for the sauce.
2. Half cook the noodles. Drain once cooked.
3. Heat a pan. Add in 1 tbsp sesame oil and sauté the veggies and tofu (if using). Once tender, add in the noodles and the sauce. Add the salt to taste.
4. Cook for a few more minutes until the noodles absorb the sauce and are cooked. Enjoy while hot!
