MEXICAN style SEAFOOD SUNDAY. BLACK BEAN TOMATO SAUCE made in ten minutes with just SIX ingredients! This is like a lightened up Mexican dip in pasta form! Paired with some leftover shrimp coated in my cilantro lemon pesto (last post). I hope you had a fabulous weekend. It was a good one for me…sushi date on Friday, lots of errands and packing yesterday and homemade hot pot last night (if you caught my stories). This was seriously the best lunch! I made a loaded brunch plate this morning for TWO and whipped up some pasta for lunch to share. How was your weekend?

Deets: boiled wild shrimp brushed with cilantro lemon pesto, avocado and @eatbanza shells with this sauce and tomatoes. SAUCE: 1 jar black bean dip from @tenayofoods, 1 can crushed organic tomatoes, 1 cup water, 1/2 teaspoon salt, 2 teaspoons cumin, 1 teaspoon chili powder, 1/2 onion chopped and 2 cloves of garlic. Sauté the onions and garlic for a couple minutes on medium high, add the rest of the ingredients and reduce heat. Add water if you need! #resolvetoeatmorepasta •
