1 cup of soy milk
1 tsp apple cider vinegar
2 cups of flour or spelled flour
2½ teaspoons baking powder
¼ tsp. Soda
½ teaspoon salt

¼ cup + 2 tablespoons rapeseed oil
1 tsp vanilla extract
Cup of 1 lemon
1½ – chocolate drops
In a small bowl mix soy milk and apple cider vinegar. Set aside so the milk can coagulate.
In a larger bowl mix flour, baking soda, baking soda and salt.
Mix flavordrops, rapeseed oil, lemon peel and vanilla extract. Add soy milk-vinegar mixture and stir. Stir in the dry ingredients (do not stir too much). A few lumps are fine. Fold in chocolate drops.
Pour batter into muffin cases and fill to ¾ full. Bake at 180 ° for 20-25 minutes.
