Favorite oven-Kaiserschmarrn ? (recipe)

Yes, dear Kaiserschmarrn, a good, soul-warming meal that I enjoyed eating as a child. There are of course countless recipes for it and I have also tried various variants. But I’m really happy with this recipe. That was years ago, but I’ve stayed with it since, for me it’s the perfect Kaiserschmarrn. The whole family loves him! ♥ ️
The recipe is very simple: eggs, flour, a little salt and milk, I leave out the raisins, but you can of course add them if you like. And then off to the oven.
Of course you can also bake it in the pan.
I always make this recipe in 5 times the amount (for 5 people), because an oven emperor pancake is already practical. You can also replace the sugar. Now I’ve written down the standard recipe.

Recipe for a good portion:
65g flour
125 ml milk
½ tbsp vanilla sugar
1 tsp vanilla paste
1 pinch of salt
2 egg yolks
2 egg whites
25g sugar or other sweetness
25g butter
(25g raisins)
15g sugar, for caramelizing

Mix the flour with milk, vanilla sugar, vanilla paste and salt until smooth. Stir in the yolk. Beat the egg whites with sugar until stiff and fold them under the dough.
Heat the butter in an ovenproof pan. Pour in the egg mixture (sprinkle the raisins over it). Bake in the preheated oven for approx. 200 ° C for 15 minutes, then divide into quarters. Turn and bake for 10 minutes.

Cut into pieces, sprinkle with sugar and let caramelize in the oven.
We prefer to eat it with powdered sugar and apple sauce.
