EASY ARTICHOKE HUMMUS GNOCCHI

This is soooo easy this will take you 15 mins!
3/4 container store bought hummus (I used artichoke flavor)
1/2 cup water
2 tbsp nutritional yeast
pinch of salt and pepper
16 ounces gnocchi (I used gluten free)
1 cup frozen shiitake mushrooms
1 cup frozen broccoli
1/2 cup frozen peas
1.Bring a large pot of water to a boil and cook gnocchi according to the directions on the package.
2.In a bowl combine hummus, water, nutritional yeast, salt and pepper. Mix together.
3.In a large pan over medium to high heat, add frozen vegetables. Sauté for 7-8 minutes…once the water from the frozen vegetables has evaporated drizzle 1 tbsp avocado oil over the veggies, add a pinch of salt and pepper and sauté for an additional 6 minutes.
4.Once the gnocchi is done cooking, transfer to the cooked veggies then pour over the hummus sauce. Mix all together to combine and enjoy!
