250 g butter
250 g powdered sugar
1 pck of vanilla sugar
1 tsp. Vanilla extract ½ packet of baking powder
For the meringue mass:
6 egg whites
500 g of powdered sugar
For the filling I took apricot jam and strawberry jam (happened or buy without pieces)
Cut the cold butter into small pieces and whip together with the icing sugar and vanilla sugar.
Add the eggs and the vanilla extract and stir.
Sift the flour with the baking powder over the dough and stir. Keep the dough wrapped in cling film cold for at least one hour.
In a clean, fat-free bowl, beat the egg whites very stiff for 8 minutes at the highest level.
Gradually add the icing sugar and continue for at least 7 minutes.
Preheat the oven to 160 ° C circulating air and lay out a baking sheet with parchment paper.
Roll out the dough on a floured surface and cut out the cookies with a flower cutter. Put the finished cookies on the baking tray.
Pour the meringue into a piping bag with star spout and dab each of the flowers. Bake for about 15 minutes and allow to cool completely.
Put the jam in the center of your cookies with a pastry bag and let it dry well.
