In a small bowl mix soy milk and apple cider vinegar. Set aside so the milk can coagulate.
In a larger bowl mix flour, baking soda, baking soda and salt.
Mix flavordrops, rapeseed oil, lemon peel and vanilla extract. Add soy milk-vinegar mixture and stir. Stir in the dry ingredients (do not stir too much). A few lumps are fine.
Pour batter into muffin cases and fill to ¾ full. Bake at 180 ° for 20-25 minutes.
