Some feisty colors for my clean-out the fridge salad!? ✨??

I actually had way more ingredients than I thought I did, which is always a pleasant surprise ? This often happens, you guys. I’ll take a look at the fridge contents and be like…wow there’s nothing left. But as I pull out various items, I’m usually shocked at the amount of things that I can throw in for a delicious lunch or dinner. ???

Does this happen to you all? When your fridge seems like a barren wasteland? ? Always extremely thankful for an abundance of food and don’t want to end up throwing away ingredients. We as a family have tried to be MUCH more aware of this, thanks to others on instagram who have brought my attention to food waste in recent months. Here’s to using up all those veg and fruit that have made their way to the back of the fridge! ??
