Happy Monday friends! ??? Sharing a tasty snacktime dish today. I made this delicious dip with asparagus and cucumbers back in May and forgot to post it! I use this dip also as a salad dressing, and it’s so refreshing with lemon juice and fresh herbs. If you’re looking to add flavor to a dish, citrus and fresh herbs are amazing ???

I trimmed off the tougher bottom of the asparagus bundle and roasted on 400 degrees for 12 to 15 min in a bit of avocado oil with salt and pepper, just until crisp-tender. Bundles of thinner asparagus vs thicker will cook faster. Slice up some cucumber, and sprinkle with pepper to serve. The dressing recipe is below. Happy dipping! ???

DRESSING:
1/2 cup unsweetened plain yogurt – I used @so_delicious
Juice of 1/4 large lemon
1/4 t kosher salt
1/4 t garlic powder
2 T (packed) finely chopped cilantro
1 T (packed) finely chopped dill
