Ingredients:
150ml water, lukewarm
150ml milk, lukewarm
20g fresh yeast
35g sugar
8g salt
70g soft butter
500g wheat flour

Dissolve the yeast in the lukewarm water-milk mixture. Warning, the yeast can not withstand more than 40 °, you have to be careful. Mix the flour together with the sugar and salt. I prefer to knead the dough in my food processor. Simply add the liquid to the flour, egg and butter and let the machine run for about 3-4 minutes. The dough is well kneaded when it separates nicely from the bowl rim, is smooth and no longer sticks. If this is not the case after the specified time, add 2-3 tablespoons of flour again – one by one and let the machine run. Then cover the dough and let it rise in a warm, wind-protected place for an hour.
The dough now in approx. 10 parts à 80-90g. I then form balls out of the dough pieces. Then place the bun on a very lightly floured surface and loosely shape it in a circular motion under your hand. Then place the rolls on a sheet of baking paper and press them a little flat. Now cover the buns with a clean towel and let go for another hour.
Preheat the oven to 200 ° (bottom and top heat). The following ingredients are needed to spread the rolls
1 egg, room temperature
A sip of milk, room temperature

Whisk the egg with the milk and brush the dough with it. Sprinkle a little sesame over it and bake for 15-18 minutes. They should be nice and golden brown.
After cooling and roasting, the bread rolls can be filled as you wish.
