Pesto Chickpea Patties (RECIPE BELOW!) ? I had this with a bulgur salad, mayo pesto, and some lemon!

The bulgur salad is basically cooked bulgur wheat with cilantro, lemon juice, bell peppers, and red onions. For the pesto mayo, I added pesto into my vegan mayo and just mixed it together!

Pesto Chickpea Patties
__
1 cup cooked chickpeas
1 flax egg (1 tbsp flax seed meal + 3 tbsp water then let sit for 5-10 mins until thick)
1 1/2 tbsp basil pesto*
1/4 tsp salt (or more to taste)
1 tbsp nutritional yeast (optional, just for added flavor)
2 tbsp all purpose/whole wheat flour
1 small red onion, diced
2 cloves garlic, minced

1. Sauté the garlic and then the onions in a little oil.
2. In a food processor, add all the ingredients and quickly process. You can leave some Chickpea chunks.
3. Form into patties and pan fry over medium heat in a little oil for 5-8 minutes on each side or until golden brown. *You can opt to use 1/4 cup packed fresh basil and add an additional 1/4 tsp of salt to taste.
