Tofu satay with spicy peanut sauce?

Happy Monday, my Insta friends?. Today I am sharing my all-time favorite skewered dish – satay. Marinated with aromatic spices overnight or for few hours, and grilled for a quick delicious appetizer.
If you do not like peanut sauce, you can sub with almond butter or omit this sauce completely.

Recipe:
~ 1 package firm tofu, rinsed and drained very well, cut into large stick shaped
~ 12 skewers, washed and soaked in water for few minutes, dry well
~ oil for brushing (add a dash of soy sauce for color)
Marinade ingredients, blend below – ~ 4 tbsp chopped lemongrass (used frozen ones, but fresh ones are great too)
~ 2 tsp coriander powder
~ 1 tsp turmeric powder
~ 1/2 tsp curry powder
~ 1/8 tsp garlic powder (optional)
~ 1/8 tsp salt
~ 1 tsp soy sauce/tamari/amino
~ 6 tbsp water
Peanut dipping sauce – mix below together and set aside
~ 1 tbsp chunky peanut butter
~ 1 tbsp soy sauce, use 1/2 tsp if using salted peanut butter
~ 2 tsp maple syrup
~ 1 tsp sriracha sauce
~ 2 tbsp water
Mix marinade ingredients in a large plate enough to hold all tofu in a single layer. Marinate tofu for a few hours, I did mine overnight. Tofu will turn bright yellow, brush little oil mixture on tofu and grill on a nonstick griller until cook. It takes about 3-5 mins depending on your griller. *skewer inserted after they are grilled since I am using an indoor griller. Please stick in skewer before grilling if you are using the open fire BBQ grill.*

Serve as-is or with peanut sauce and cucumbers. You may make fried rice with the remaining marinade or brush more on your tofu when grilling.
