With all the holiday festivities coming up my days have been pretty busy and hectic so I’m really living for easy (and hearty!) recipes. This 3-Ingredient Potato Hash Pancake with a Homemade Marinara Sauce is perfect for any time of the day—whether it’s for breakfast, lunch, or dinner. All you need for the pancake are potatoes, salt, and oil. YUP, THAT’S IT! You can also of course opt to make these in smaller cakes and in different shapes, so it’s totally up to you! Homemade Marinara Sauce
Makes roughly 2 cups

1 can (400g) diced tomatoes
3 tbsp tomato paste
2 tbsp coco sugar or sugar of choice, adjust according to desired sweetness
1 tsp salt, or to taste
1 tsp dried basil 
2 tbsp olive oil
In a blender or food processor, quickly process everything until smooth. Feel free to adjust according to desired taste!

Here’s what you’ll need for the pancake:
A large pan (I used a cast iron pan)

4 packed cups shredded raw potato (from 2 large potatoes–I used the yukon gold variety) 1/2 tbsp salt
2 1/2 tbsp canola oil or neutral cooking oil of choice
Marinara sauce, for dipping
