Whole Roasted Black Sea Bass with scallion, garlic confit, garlic oil, soy sauce.

Place cleaned black sea bass (or any other whole fish, about 1 – 1 ½ lbs.) onto rimmed sheet pan. Stuff cavity with aromatics such as ginger, lemon slices, scallions, herbs, etc. Drizzle everything with grapeseed oil and roast in a 400ºF oven for about 15-20 minutes until cooked through. Fish should flake easily with a fork. Top with soy sauce, garlic-infused oil, garlic confit and top with a pile of scallions and/or cilantro. Serve with hot rice.
