What’s your favorite way to cook mushrooms? One of my ways to use them is in a really hearty and creamy mushroom risotto. It was also the day of the mushrooms yesterday and just wanted to share how much I love these often overlooked fungi. They’re not plants because they don’t contain chlorophyll and fungi doesn’t make them sound very appetizing but they’re packed with flavor and they contain significant amounts of protein, iron, fiber, and vitamins. I usually use what mushrooms are available locally so these are fresh oyster and dried shiitake mushrooms. I’ve a newfound appreciation for mushrooms ever since I started my thesis research last year and learned of the different types of mushrooms—but a lot of them have more or less the same nutritional benefits, just varying tastes and textures ?
