VEGAN CHOCOLATE CHIP BANANA BREAD! A little overboard on the chocolate chips ? ?

Ingredients:
3 ripe bananas (spotty or all the way black)
1/2 cup melted coconut oil
1/2 tsp vanilla extract
1/2 cup coconut sugar (or reg sugar)
2 tbsp ground flax + 6 tbsp water
1 1/2 cup organic all purpose flour
1/2 cup chocolate chips + more for topping
1 1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
Notes for swapping out ingredients: *You could use whole wheat but it will be a more dense bread
*As for gluten free, I have not tried using GF Flour… but I would recommend a gluten free flour blend
Method:
1. Preheat oven to 350 degrees.
In a small bowl combine 2 tbsp ground flax and 6 tbsp water. Stir and set aside for 10 minutes.
2.In a separate bowl, mash bananas with a fork well… Until you have a gooey mixture, takes about 3 minutes. Add the melted coconut oil and sugar to the bananas…mix, then add flax mixture, and vanilla extract. Mix with a wooden spoon.
4.In a separate bowl combine flour, chocolate chips, baking soda, cinnamon and salt. Stir to combine then gradually add the dry ingredients to the wet, mixing with a wooden spoon as your incorporate.
5. Grease a loaf pan with coconut oil then pour the batter into the pan. Simply smooth out the top and place in preheated oven for 45-55 minutes or until top is golden brown. To check if center is baked through simply poke a tooth pick in the center… it is done when tooth pick comes out clean! Take out and immediately add chocolate chips on top (totally optional). Let sit for 15-30 minutes before slicing!
