VEGGIE SANDWICH ✨It was been a hot minute since I last shared a veggie sandwich with you, which is strange because I seriously eat them allll the time. There are a few components I like to think about when making a sandwich to make sure it’s delicious, filling + nutritious 🙌🏼 1. Whole wheat bread- particularly, I try to look for bread that has at least 4g of both fibre and protein per slice 2. Loaded with allll the veggies I have lurking around my fridge 3. A source of protein! This could be mashed chickpeas, garlic tofu, tempeh, or hummus 4. A source of fat- usually avocado or olives 5. Anything else I want for flavor! I usually add vegan mayo + mustard, but add whatever you like best! ✨.
This particular sandwich has hummus, avocado, arugula, red pepper, red onion + grated carrot 🍂
