Veggie & Quinoa Buddha Bowl with Chipotle Maple Dressing ??

This was a super textural and flavorful salad recently, with all the veggies and nutrient-filled goods to go along with them! There’s a spicy dressing too ???

The bowl includes kale massaged with a bit of olive oil, red bell pepper, black beans, zucchini noodles, quinoa, avocado and roasted asparagus.

Chipotle Maple Dressing:
1-2 chipotle in adobo finely minced*
1/3 cup pourable tahini
3 T water
2 T maple syrup
1/4 teaspoon kosher salt
1/4 teaspoon pepper
Juice of 1 lemon
Whisk all ingredients together until smooth. If desired, add a bit more water to thin. *You can find chipotle peppers in adobo sauce usually in the international foods aisle of any grocery store, if you haven’t purchased these before. Alternatively, use a pinch of cayenne powder or red chili flakes and a dash of chili powder or smoked paprika. ???
