Vegetable Tortilla Soup! ??
A little bit spicy, a lot of texture, and so tasty. This one-pot recipe is fast, convenient to throw together, and made with ingredients you likely have in the pantry! Not to mention satisfying even for the non vegans in the family. The simple recipe is below! I used @beanfieldssnacks delicious black bean chips to top the soup. They added awesome flavor and texture. Enjoy your night friends! ??
1 medium onion finely chopped
1 T oil
1 t kosher salt
1/2 t pepper
1 T cumin
1 T oregano
2 T chili powder
1 T ancho chili powder (can sub regular)
1 t smoked paprika
1 T garlic powder
3 potatoes diced small
2 cups corn
2 cups cooked black beans
1 15 oz. can crushed tomatoes
32 oz. vegetable broth
Garnish: chopped red onion, bell pepper, and tortilla chips
In a large pot, add oil and onions, cook until translucent about 7 minutes, stirring often and adding bit of water if needed to prevent sticking. Then add all spices, stir, cook for 2 minutes. Add potaoes and cook at a low simmer, covered for about 15 minutes or until the potatoes are tender. Add additional broth to cover potatoes if needed along the way. Add corn and beans and cook for another 5 min. Taste for seasoning and add another half teaspoon of salt if desired. ???
