Vegan Peanut Curry from @mymeatlessmeals ?? ?
Ingredients:
[spice blend]
• 2 tsp cumin
• 2 tsp ground coriander seeds
• 2 tsp paprika
• 1 tsp turmeric • 1 tsp cayenne

• 150 onion
• 1 tbs coconut oil
• 1 tbs chopped garlic
• 400 g bell peppers
• 450 g zucchini (courgette)
• 250 g potatoes, peeled and cubed
• 1/2 cup peanuts* (or peeled almonds if you’re allergic*
• 4 cups salted veggie broth
• 2 tbs tomato purée (tomato paste) • 1/2 cup peanut butter or almond butter (if you’re using unsweetened kind, add 1-2 tsp coconut sugar to the curry for a hint of sweetness)

Instructions:
1. Sauté onion with coconut oil until softened before adding slice blend and continue to stir on low heat, allowing the spices to cook become fragrant. DO NOT BURN THE SPICES. Add more oil if needed.
