Vegan Meal P r e p🌿😀
Gluten-free chocolate zucchini muffins + Lentil curry with sweet potato & basmati rice (recipe by the lovely @dailyclove) + protein-packed taco salads with walnut taco “meat” (soaked walnuts & spices), black beans, veggies, avocado cilantro dressing & tortilla strips🌿
Low in saturated fat, zero cholesterol and super high in fiber, protein and iron (to name a few), heart-healthy legumes (like lentils & black beans) are such a beneficial ingredient to include in your diet! And in case you are worried about the lectins in legumes you may have heard touted by your Facebook friends, just be sure to cook your legumes before eating them (cooking virtually eliminates lectins). The lectins that some worry about are present in RAW legumes, and I’m not quite sure who eats raw legumes, so not to worry! Canned legumes are already cooked, just be sure to rinse them to get rid of the extra starchiness in the water they are kept in to reduce potential gassiness. #plantbased #plantpower
