?Vegan French toast?Happy ‘French toast Friday’ lovelies. I’m probably more of a pancake person but sometimes you need to change things up, right? (I think melted chocolate + banana would also be a great topping on these. Maybe that’s because I’m a chocoholic ?. Oh well, maybe next time?.) They were still really really yummy?!
?Recipe: Whisk 1 cup almond milk with 1/4 cup mashed banana (or pumpkin purée). Whisk in 1 tbsp flaxseed meal. Let sit 5 minutes. Whisk and add 1 tsp cinnamon, 1/4 tsp ground nutmeg, 1 tsp vanilla extract and pinch salt. Let sit another 5 minutes to thicken. Submerge bread of choice (firmer is better) in batter and cook on greased griddle, flipping half way. Should be enough for about 5 slices of bread. Top with berry compote, nuts, seeds, cashew butter and fresh fruit.
