Happy Monday, friends?. Sharing a healthy and delicious meal using @RightRice Original – rice made from lentils and chickpeas is a wonderful way to add more protein to a meal. I love how easy and quick it is to prepare the rice and when paired with buttery cauliflower, you’ll have a scrumptious meal in no time.?
Recipe
Ingredients:
~ 2-3 cups cauliflower (about 1 small/medium head cauliflower), wash and cut into florets
~ 3 cloves of sliced garlic
~ 3 chopped Thai chilis
~ handful of curry leaves
~ 1 tablespoon vegan butter
~ 3/4 cups plantbased milk (used oatmilk)
~ sugar, salt, oil
~ 1 bag of @RightRice original (follow the package instructions and your rice will be ready in less than 12 minutes??, shared on my stories as well)
?Batter ingredients: Mix 3/4 cup all-purpose flour, 1/4 teaspoon salt, a few shakes of white pepper in a bowl with 1 cup of cold water until well combined. The batter should be on the thicker side.
✔️Dip cauliflower florets in batter, shake off excess & fry until golden brown. (I used a small saucepan) Drain excess oil on a paper towel.
(Bake version: grease a baking sheet pan with oil, place battered cauliflower florets on the pan. Bake at 485F until light golden brown for about 20-25 mins, be sure to flip halfway & brush florets with oil if needed. For the last few minutes, you may broil to get a crispier texture)
✔️In a heated non-stick pan with a drizzle of oil, sauté garlic and chilis along with curry leaves until fragrant. Melt 1 tablespoon butter and add in oatmilk, 1 teaspoon sugar, 1/2 teaspoon salt (adjust to your preference) and cook until sugar melted. Toss battered cauliflower in this mixture until all florets are coated with sauce.
