VEGAN BASIL + ARUGULA PESTO✨ One of my favourite meals when I’m craving something hearty like pasta, but also super flavorful and fresh 🌿 I love adding arugula to this for some added greens and the delicious pepper flavor, and I always swap pine nuts for pumpkin or sunflower seeds to make this recipe WAY more budget friendly 🙌🏼 Perfect for pasta, sandwiches and spreads and SO easy to whip up ✨.
To make (about 1 cup) 👇🏼:
In a blender or food processor, blend together 1 cup of basil, 1 handful of arugula, 1/3 cup nutritional yeast, 3 small cloves of garlic, a healthy pinch of salt, 1/3 cup of pumpkin seeds, the juice of 1 lemon, 2 tbsp of olive oil and 2 tbsp of water (plus more if needed). Enjoy! 💛
