Vegan Baklava, anyone?

Sharing a yummy vegan treat today with simple ingredients. All you need is patience and time.? Inspired by @natashaskitchen and adjusted to what I have on hand and taste preference?

Recipe:
~ 4 cups of roasted unsalted almonds
~ 2 tsp cinnamon powder
~ 1 package phyllo dough (~40 sheets)
~ 1 cup melted vegan butter
~ pistachio crumbs for toppings (optional)
Syrup
~ 3/4 cup of pure cane sugar
~ 3/4 cup of maple syrup
~ 3/4 cup of water
~ juice of 1/2?
Mix syrup ingredients in a pot, and boil until sugar dissolves, then let simmer for 2-3 mins to thicken a bit. Set aside to cool.
Blend almonds in food processor until coarsely fine, do not blend for too long or you’ll get almond butter.? Add cinnamon powder and set aside.
Thaw phyllo dough based on package instructions. Depending on your phyllo dough size, you may need to trim to fit your pan. I did on mine. Butter a 9X13 pan, lay one sheet, and brush with butter, continue with another layer and repeat.
Here is the sequence
–> 10 sheets, almonds
–> 5 sheets, almonds
–> 5 sheets, almonds
–> 5 sheets, almonds
–> 5 sheets, almonds
End with 10 sheets at the top and brush more butter, cut into your desired shapes. These sheets are so fragile, I ripped some so adjust accordingly. My thought is not to skimp on bottom and top layers. Bake at 325F for 1hr 15mins or until top layer turns golden brown.

Remove baklava from oven and drizzle syrup all over and hear the sizzle! Satisfying!? Drizzle with melted chocolate and top with pistachios if you want. Let rest overnight before serving.
