VEGAN AVO KALE GRILLED CHEESE !

@chancy.james is spoiled as heck 😅 I make mostly all his work lunches 🙊 so I have plenty of good work lunch ideas up my sleeve ✨
Bread of choice
Vegan cheese (I like chao or follow your heart slices)
1 cup Kale, finely chopped
1/2-1 tbsp vegan butter (miyokos or follow your heart brand)
1 tsp avocado oil
1. In a small pan over medium heat add avocado oil. Add kale to the pan and sauté for 3 minutes. Season with salt and pepper. Once cooked add to a bowl and set aside.
2. Assemble grilled cheese by spreading vegan butter on one side of each piece of bread. To a hot griddle add the slices of bread butter side down…on the non butter side add vegan cheese slices. Top with second slice of bread, vegan side up. When underside is golden brown, about 4 minutes, turn sandwich, press down on sandwich to even browning and to help melt cheese. Cook until second side is golden brown and vegan cheese is melted. Place grilled cheese onto plate, carefully open sandwich, add avocado slices and sautéed kale. Enjoy! •
