Tofu & Corn Salsa Tacos!! Perfect for #meatlessmonday
and in preparation for #tacotuesday ? ??

These were so quick to put together, and packed with flavor. ??? INGREDIENTS:
Dressing
1.5 T red wine vinegar
3 T olive oil
2 T red onion finely chopped
2 T cilantro finely chopped
2 teaspoons maple syrup
Juice of 1/2 lime
1 green chili minced
1 garlic clove minced
1/2 teaspoon kosher salt
1/4 teaspoon pepper
Veggies
3/4 cup corn
3/4 cup chopped seedless cucumber
1 bell pepper diced small
Other:
2/3 block tofu, drained and pressed with towels
Small amount oil
Salt, pepper, smoked paprika or chili powder, garlic powder
Tortillas of your choice
Garnish:
Avocado, salsa, crema, red chili flakes
DIRECTIONS:
Whisk dressing ingredients together and add veggies. Meanwhile, slice tofu into cubes about 1.5 cm thick. Put a large skillet over medium heat then add small amount of oil. Add tofu, season with a generous sprinkling of salt, pepper, smoked paprika or chili powder, and garlic powder and let sit without stirring. After 3 minutes, gently flip. After another few minutes, flip onto another side to brown.
To assemble, add sliced avocado to a tortilla, top with a few tofu cubes, veggie mixture, and other garnishes. ????
