Today I was craving a sweet and savoury combo in the form of a huge bowl of cinnamon roasted sweet potato, garlicy roasted chickpeas and my classic tahini, lemon + maple syrup drizzle so that’s exactly what I made ✨ Fun fact- I had this for lunch almost every single day in my undergraduate degree because it was so easy to make a big batch of on Sunday and have throughout the week ? What’s your go-to easy meal?! ✨.
To make ??:
Chop 1 large sweet potato and toss with 1 tsp of cinnamon. Then drain and rinse 1 can of chickpeas and toss with a tsp each of smoked paprika, garlic powder + onion powder. Place sweet potato and chickpeas on a sheet pan and roast at 450 F for 25 minutes. Meanwhile, massage some kale with lemon under it turns to a darker green and becomes softer. Once chickpeas + sweet potato are done, add to kale and top with a drizzle of tahini, lemon juice + maple syrup and enjoy! ?
