TOASTING to Thursday with these sweet potato toasts topped with my CAULIFLOWER HUMMUS two ways (PERFECT FOR #superbowl) and this cashew cream spread. Both of these are #whole30approved. I’ve been feeling a shift in my life the past couple days and I’m feeling good about it ❤️ If you saw my stories this morning I made a BUNCH of these toasts for the week, so easy to make and so perfect to reheat for any meal or snack! Recipes below…HAPPY THURSDAY!



Deets: sweet potatoes sliced 1/3 inch thick, brushed with coconut oil and roasted for 30 mins on 425, slipping halfway. 1. Cauliflower hummus blended with spinach, leftover shrimp and tomatoes. 2. Cauliflower BEET hummus (cauliflower hummus mixed with @lovebeets powder), avocado, micro greens and @vitalfarms egg with sesame seeds. 3. Cashew Spread, kiwis, blueberries, watermelon seeds, @woodstockfoods Cashew butter and @beekeepers_naturals new pollen. Cauliflower hummus: one head of cauliflower cut up, drizzled with 1 tablespoon of coconut oil, salt and pepper and roasted on 425 for 35-40 minutes until cooked through. Blend with 1/4 cup @seedsofcollaboration tahini, 1/2 teaspoon cumin, 1/2 teaspoon paprika, 2 cloves garlic, 3 tablespoons lemon or lime juice and six tablespoons water…salt and pepper to taste. Cashew Spread: 1 1/2 cups cashews boiled for ten minutes then rinsed, then blended with 1 tablespoon lemon juice and 1/2 teaspoon salt and 3/4 cup of water. •
