Toasted Rice Burgers filled with Teriyaki Oyster Mushrooms ? ? the recipe for this is now up on my blog! My rice-loving self was very happy while eating these. I was inspired by those rice burgers I saw from a famous chain that serves rice burgers and realized I could made vegan versions of them so here they are. I also used locally grown oyster mushrooms, that were sourced from a farm in Quezon, which I’ve been getting mushrooms from for my thesis. Speaking of thesis, I’ve successfully defended mine and I feel so fulfilled especially after months of research, revisions, and just lots of work. Thank you to everyone who’s given me recommendations on local mushroom farms and just overall helped me along the way by giving me tips and giving me some motivation. I wanted to center my thesis around helping local farmers while also tackling health and sustainability so I’m pretty happy with what I’ve done. Next up is our thesis exhibit. Another step closer to graduation.? (P.S. I used this amazing reusable silicon wrap that was given to me instead of the usual plastic wrap to mold these rice burger buns!)
