This plate of vegan fried “chicken” and gravy (recipes on my blog) with a side of Filipino-style spaghetti reminds me of my childhood. I remember while growing up I attended a lot of children’s parties and events that served this combo, especially when parties were celebrated in Jollibee (a local fast food chain here) that serves a jolly spaghetti (as they call it) with some chicken and gravy. So this is probably why this combination reminds me so of my childhood and eating it just brought back a lot of memories (wow this makes me sound really old ?). Anyway in case you’re wondering, Filipino style spaghetti is a take on the traditional spaghetti except that we Filipinos like it really sweet and topped with shredded cheese. We even have Filipino style tomato sauce here that’s usually much sweeter than Italian style ones. Our local ketchups also have “sweet” style ones instead of regular ketchup variants that are a bit sour. ? what dish reminds you of your childhood?
