This mushroom toast was part of a fun project that I’ll share with you soon!

Mushroom Toast: heat olive oil or duck fat on medium-high, sear a mix of sliced cremini and wild mushrooms for about 5 min undisturbed, until slightly golden. Add sliced garlic or shallots, stir well with mushrooms, reduce heat to medium, add a tiny splash of white wine if you’d like, cook for about 3-4 minutes until everything has softened, fragrant and appetizingly golden. Before serving, stir in a dollop of crème fraîche, a squeeze of lemon, season with salt/pepper, chili pepper flakes, parsley. Top onto buttered toast, olive oil fried bread, or a carb of your choice.
