The Soba Noodle strikes again! Okay, that’s a bit dramatic 😁 but I had to share this other shot of Monday’s deliciously creamy noodle dish, because I made a huge batch of this and have been enjoying it for lunch or dinner since then. I have added tofu in some meals, other just as is! Fill up the plate with lots of veggies to get in your nutrients, and to help you stay full for longer 🌿🍃

Creamy Ginger-Sriracha Tahini Sauce with Noodles 🍜🌽🌿

The obsession with pasta is real 😋 And this one is definitely a keeper! 🌿🍃

Steamed veggies: I used corn, peas and cauliflower, about 3/4 cup each, but adjust to your liking. 🌿🍃 1/2 package soba noodles, cooked according to package directions and rinsed in warm water. Drain thoroughly, and add a small amount of oil if desired, to prevent sticking while you’re preparing other ingredients.

Sauce: whisk together the following, and garnish with red onion, chili flakes and lime ➡

1/4 cup low sodium soy sauce
1/4 cup tahini
1.5 T rice wine vinegar
1 T agave
1/2 to 1 T sriracha
1 T sweet chili sauce
1/2 tsp ground ginger
1 minced garlic clove
