Thai pineapple fried rice, anyone??
Happy FriYay, friends? so, what do you get when you add fruits to your fried rice?
Expect a sweet, tangy and appetizing dish with a tropical feel? that you won’t stop with just one spoonful?.
Yup – give this easy peasy dish a try and let me know what you think.?
Recipe (serves 2-3)
Ingredients:
~ 2 cups cooked Jasmine rice (used rice cooker)
~ 1/2 cup of each: dry roasted cashew, fresh?chunks, pan fried tofu, broccoli stems
~ 1 small carrots – diced
~ 1 small onion – sliced
~ 3 cloves garlic – minced
~ 1 tablespoon sliced jalapeño
~ oil, salt to taste
?Sauce (mix together): 1.5 tablespoons ‘fish’ sauce (recipe on highlights) & 1.5 tablespoons soy sauce/liquid amino ✔️In a heated non-stick pan with 2 teaspoons oil, sauté onion, garlic, & carrot until soft. Then, add broccoli stems, tofu, rice and sauce. Stir continuously until all rice are well coated with sauce.
✔️Finally, add cashews, pineapple, jalapeño and season well. Super easy and quick for any meal of the day. You can add other green veggies as well. Serve warm with some Thai basil.? ✨Few tips to get fluffy rice:
– When you cook your rice, use a little less water than requested. I have always used my rice cooker, and my finger to gauge the water needed.?
– Let rice cool down first. Some people love to use overnight rice and I do that too for kids’ lunch, same results.??
*In case you were wondering what I did with the remaining pineapple, it was served as fruit and I composted the skin.?
