Super easy to make & top with your favorite ingredients for a quick meal. Give below homemade tortilla recipe a try😉

Toppings:
Baked mini sweet potatoes wedges, buttered black beans (simply drained one can of black beans and saute with @miyokoscreamery butter, cumin, and salt), grilled red pepper and onion, shredded purple cabbage, 🥑 with Chipotle mayo (mix 3 tablespoons @followyourheart mayo with 1 tablespoon chipotle pepper in adobo sauce)

Tortilla Recipe adapted from Café Sucre, used a mixer (you may knead by hand too)
Ingredients: 1.5 cups whole wheat flour, 1.5 cups all-purpose flour, 1 teaspoon salt, 1 teaspoon baking powder, 1 cup of warm water, 1/3 cup avocado oil.
Whisk all dry ingredients in a mixing bowl until well combined, add water and oil.
Using a dough hook, mix flour mixture until it turns into a dough. Dust flour on a clean countertop, remove dough and knead few more times with hand to remove air pockets.
Divide dough into 16 pieces, roll into a ball and cover with damp towel. Let rest for at least 30 minutes.
Heat a nonstick pan until hot, then turn heat to medium-high. Roll dough into a flat circle and toast tortilla until you see bubbles popping up, then flip. If you get a big bubble (check my stories), it will be so fun. I usually get this when my dough has rested well. Cooked tortillas should have some brown spots and foldable. Use a tortilla warmer if you have one. If not, use a paper towel to cover cooked tortillas to avoid drying out.
