?Sweet & spicy ‘meaty’ mushroom bowl with sesame garlic broccolini + edamame??Bringing back one of my favorites because I’m heading back home from vacation today…which means…no new dishes until tomorrow!?I posted this previously when I had reached 15K followers. Looking back from where I started, I feel so grateful to all of you for helping me to grow.?Thank you.?
?Recipe: Cut into quarters about 3/4lb crimini mushrooms. Heat 2 tbsp sesame oil (or neutral flavored oil) in medium saucepan and sauté 1/2 yellow onion (finely diced) until golden brown. Add 4 minced garlic cloves and sauté another 30 seconds. Add 1/2 tsp dried oregano, 1/2 tsp smoked paprika, 1/4-1/2 tsp chili powder, salt to taste. Sauté a few seconds before adding 4 tbsp tomato paste. Mix together and add 1.5 tbsp reduced-sodium tamari/soy sauce, about 2 tsp sriracha, 2 tsp maple syrup and mix. Add mushrooms and keep stirring on medium heat until mushrooms release their water. .
