Sweet Pea Gnocchi with Arugula Walnut Pesto ?❤️?❤️ A yummy pasta dish with all the springtime vibes.The pesto is super simple, & the gnocchi only requires 4 ingredients ?? What you need for the pesto: 2 cups arugula packed, 1/2 cup walnut pieces, 1/2 cup veggie broth, 1/4 cup nutritional yeast, 2 green onions roughly chopped, juice of 1/2 -1 lemon, zest 1 lemon, sea salt/pepper to taste The Gnocchi: ”00” flour 1/2-1 cup, 1 lbs frozen peas, 1/4 cup vegan butter, 1/2 tsp sea salt
1️⃣ For pesto: Toast walnuts low/medium heat 2 min on stovetop, then combine all ingredients in food processor, pulse 5-6x, while slowly adding broth to reach desired consistency, scraping down sides if needed
2️⃣On stovetop over med, add butter, when melted, add frozen peas, heat till tender
3️⃣In a high speed blender, purée peas/butter for 2 min until smooth
4️⃣Add purée back to pan and cook on low for about 15 min, stirring often, the purée will become reduced & thick,let cool
5️⃣Sprinkle flour on a work surface, spread out purée, add 1/2 tsp salt over top, add 1/4 cup flour, and gently combine purée with flour, keep adding about 1 tbl of flour at a time, gently folding dough on to itself while adding more flour, it should take about 2-3 min to form a silky ball of dough. If it’s too tacky add some more flour. I used about 1 cup. Wrap in plastic wrap and let sit for 30 min
6️⃣Cut dough into quarters, take one quarter, roll out into a long snake about 1/2 – 1 in thick, then cut into 1 inch long pieces ( they should look like pillows) place on lined parchment paper with dusted flour to prevent sticking, repeat
7️⃣Cook gnocchi in heavily salted boiling water for about 3-4 min, drain, saving 1/2 cup pasta water
8️⃣For pesto: combine all ingredients in food processor, scraping down sides if needed
9️⃣Add a bit of butter, sauté gnocchi, add desired amount of pesto, add pasta water, mix until gnocchi is well coated. Enjoy!! I served mine with slow roasted tomatoes for an extra burst of flavor ❤️
