Sweet coconut sticky rice ‘Pulut Inti’

Happy Sunday everyone, hope your day is well. Today we will be outside enjoying the sun and learning about Earth♻️🌍
But before that, I want to quickly share with you one of my favorite childhood treats that’s usually wrapped in fresh banana leaves. It’s called Pulut Inti. Pulut = glutinous rice, Inti = filling😃

Recipe
Ingredients:
~ 1 cup glutinous rice, soaked overnight or at least 4 hours
~ 1 1/4 cups coconut milk ~ 1/4 teaspoon salt
~ 1 cups coconut flakes
~ 1/2 cup coconut sugar + 4 tablespoons water
~ frozen pandan leaves
~ fresh banana leaves

Drain glutinous rice and tie few pandan leaves into a knot. Then, place rice with pandan leaves, salt on a banana leaf in a steamer basket. Spoon 1/2 of the coconut milk to the rice. Cover lid and steam on high heat for 15 minutes. Remove lid, using a fork, fluff the rice and add the remaining coconut milk. Steam for another 20 minutes until rice is cook. It should look shiny pearl white. Remove and let cool.

In a heated pan, lightly toast coconut until brown, add coconut sugar mixture. Stirring continuously until all sugar is absorbed and caramelized. Adjust sweetness accordingly, more coconut sugar if needed.

Cut banana leaf into rectangle shape, 5’x7′. Clean with damp towel. Place a dollop of rice in the middle and top with a heaping spoon of coconut flakes. Wrap it like a parcel. Serve warm.
