SUNDRIED TOMATO PASTA ✨ Today I’m finally sharing with you my sundried tomato pasta recipe, using my favourite extra virgin olive oil by @Bertolli_us 🙌🏼 Swapping food containing saturated fat for those with unsaturated fat, as found in @bertolli_us olive oil, has been shown to be beneficial for heart health 💛 Their olive oil is also made without the use of synthetic chemicals and uses in-season organic olives ✨.
To make sundried tomato pasta 👇🏼:
Cook 454g of pasta as per package instructions. Meanwhile, combine in a blender 1/2 cup hulled sunflower seeds, 1/3 cup sundried tomato, 2 cloves of garlic, 3 tbsp of lemon juice, 1/2 cup of water, 3 tbsp nutritional yeast + 2 tbsp @Bertolli_us olive oil. Blend until smooth. Once pasta is done, drain and combine with sundried tomato mixture, 2 large handfuls of spinach, salt and pepper to taste + 1/3 cup of sliced sundried tomatoes (optional). Serve + enjoy! 💛 .
