SUNDRIED TOMATO PASTA ✨Having one of those days where there’s basically nothing in my fridge for dinner, except luckily I have alll the ingredients to make this delicious sundried tomato pasta 🙌🏼 Insanely easy, delicious and nutritious, this pasta recipe adapted from @ohsheglows is the perfect meal to snuggle up with on a cool fall night ✨🍂.
To make sundried tomato pasta 👇🏼:
Cook 454g of pasta as per package instructions. Meanwhile, combine in a blender 1/2 cup hulled sunflower seeds, 1/3 cup sundried tomato, 2 cloves of garlic, 3 tbsp of lemon juice, 1/2 cup of water, 3 tbsp nutritional yeast + 1 tbsp the sundried tomato oil. Blend until smooth. Once pasta is done, drain and combine with sundried tomato mixture, 2 large handfuls of spinach, salt and pepper to taste + 1/3 cup of sliced sundried tomatoes (optional). Serve + enjoy! 💛
